Deconstructed Taco Bowl with Roasted Sweet Potato
Deconstructed Taco Bowl with Roasted Sweet Potato Ingredients: ⦁ Sweet Potato: 1 medium, cubed ⦁ Ground Beef: 1/2 lb (227g), ⦁ Taco Seasoning: 1 packet ⦁ Guacamole: 1/2 cup, homemade or store-bought ⦁ Pico de Gallo: 1/2 cup, homemade or store-bought ⦁ Sour Cream: 2-3 tablespoons Preparation Method: ⦁ Roast Sweet Potato: Toss sweet potato cubes with olive oil, salt, pepper and bake at 400°F (200°C) until tender, 20-25 minutes. ⦁ Cook Ground Beef: Brown ground beef in a skillet, drain any excess grease. Stir in taco seasoning and a bit of water. Simmer until liquid is absorbed. ⦁ Assemble Bowl: Layer roasted sweet potatoes in the bowl, top with taco seasoned ground beef. Place sour cream on top of the beef and arrange guacamole and pico de gallo in separate portions. Serve immediately.
