Low Carbing Among Friends - "A Picture is Worth a Thousand Words!" Happy Sunday Friends! I was going to post a recipe but when I was flipping through one of my cookbooks, I came across a full page picture of just fresh ingredients! My son Christian designed and did all the photos with us and I remember he painstakingly took the main ingredient from each recipe as we cooked it for the book, and then put it on a piece of white paper and took a photo of just that ingredient. He then put all those ingredient pics together on one page to show the colorful fresh low carb, low glycemic choices that we CAN enjoy on a low carb lifestyle! Preheat the oven to 300°F and spray a sheet pan with vegetable oil. 2. Add all the ingredients, except the peppers and chives, to a bowl and mix well to combine. 3. Working over a sheet pan, spoon the cheese mixture into each of the 24 seeded jalapeño halves, overfilling them slightly. 4. Bake for about 30 minutes before serving hot, topped with sliced scallions or chives, if desired. HELPFUL HINTS You can lessen the heat of fresh jalapeños by pre-baking the seeded halves on the sheet pan by themselves for about 10 minutes before stuffing and baking again. Books Here---> http://amongfriends.us/GeorgeStella.php Shepherd’s Pie Recipe from George Stella’s “Still Livin’ Low Carb” Cookbook Prep Time 20 min / Cook Time 26 min / Serves 6 SHOPPING LIST Cooking oil spray 1 medium head cauliflower 1 pound ground beef Salt and pepper 3 ounces cream cheese, softened 1 large egg 1⁄4 cup grated Parmesan cheese 1⁄8 teaspoon chicken base or ½ teaspoon salt 1⁄8 teaspoon garlic powder 1⁄8 teaspoon black pepper 1. Preheat the oven to 375°F. Bring a pot of water to a boil over high heat, and then spray an 8x8-inch casserole dish with cooking oil. 2. Clean and cut cauliflower into small pieces and place in the pot to boil for about 6 minutes until soft. 3. While the cauliflower cooks, place the ground beef in a sauté pan over medium-high heat, add a dash of salt and pepper, and sauté until browned. Remove from heat, drain, and spread over the bottom of the casserole dish. 4. Once the cauliflower is cooked, drain well immediately and pat dry between layers of paper towels. Place the hot, dried cauliflower into a food processor along with the cream cheese, egg, Parmesan cheese, chicken base, garlic, and pepper, and blend until smooth. 5. Spoon the mashed cauliflower over top of the ground beef in the casserole dish, spreading to cover evenly. Bake for about 20 minutes, until the top starts to brown. Remove and let sit a few minutes before serving hot. HELPFUL HINTS Any ground meat can be used in this recipe. Ground lamb is actually traditional… not that cauliflower mashed potatoes are very traditional! Turn your overhead exhaust fan on and place the oil in a large cast-iron skillet or heavy pan over high heat until almost smoking hot. 2. Season both sides of the pork chops liberally with the blackening spice, place in the skillet and cook for about 3 or 4 minutes on each side until well seared and cooked through. Serve garnished with fresh cilantro if desired. George’s Tips: These Cajun chops go perfect accompanied by collards or spinach with roasted peppers; just add fresh or a jar of red pepper strips, butter, salt and pepper to a bag of frozen collards or spinach and microwave! Calories 370/Fat 28g /Protein 25g /Fiber 0g /Net Carbs 0g --------------------------------------------------- Blackening Spice Recipe courtesy George Stella / StellaStyle.com Store-bought seasonings are oftentimes full of unnecessary fillers and sugars. This spice mixture is so chock-full of flavor, and since all you have to do is throw everything into a bowl and shake together, you’ll most certainly find yourself using it all the time! With it, I’ve been making the most excellent blackened chicken, pork chops, and seafood for decades now. Literally, it has been a family staple since the early 80’s. SHOPPING LIST 5 tablespoons kosher salt 5 tablespoons paprika 1 tablespoon dried thyme 1 tablespoon black pepper 1 tablespoon garlic powder ½ teaspoon cayenne pepper ½ teaspoon ground white pepper 1. Mix all ingredients together. 2. Store in an airtight container or empty spice canister. Shake well before each use. HELPFUL HINTS Since this recipe makes about 1 cup, you can always double or triple it and keep plenty around for easy access during a busy workweek. It’s great for grilling, baking, or pan-frying anything, from poultry to your favorite vegetables. Christian has been really adamant that some of my classic recipes have unnecessary ingredients, and that simpler is better. He pointed to the Chicken Marsala recipe in my last book and how it had 15 ingredients! I set out to write this Grilled Sirloin Marsala for vindication, and I couldn’t believe how amazing the sauce turned out using only 5 ingredients! Books Here---> http://amongfriends.us/GeorgeStella.php ----------------------------------------------------- Grilled Sirloin Marsala Recipe by George Stella / StellaStyle.com Prep Time 10 min/Cook Time 20 min/Serving 1-6oz steak/ Serves 2-4 Shopping List 2-4 sirloin steaks 8 ounces baby bella mushrooms 2 tablespoons butter 1⁄4 cup Marsala wine 1⁄2 cup heavy cream 1⁄2 teaspoon beef base 1. Trim about half the length of the mushrooms’ stems and discard, and then quarter mushrooms. 2. Cook butter in a sauté pan over medium-high heat until sizzling. Add mushrooms and cook for 1 minute before adding the Marsala wine and cooking 1 minute further. 3. Stir cream and beef base into the pan with mushrooms, and continue cooking until sauce has reduced enough to coat the back of a spoon, about 4 minutes. Serve smothered over a sirloin (or any kind of) steak for each person. Makes enough sauce for 4 steaks, but you can refrigerate leftover sauce if only cooking for 2. Grilling Sirloins | Oil and then light or preheat a grill to medium-high to high. Season both sides of steaks with salt and pepper before grilling. Grill 3⁄4 inch sirloins about 5 minutes on each side for medium rare. Medium well will take about 8 minutes on each side. For thicker steaks, add 2-4 minutes. George’s Tips | Beef base is sold in small jars near the bouillon cubes in the grocery store and has a lot more flavor than bouillon cubes. In a pinch, you can substitute 1 bouillon cube in this recipe. You can also substitute regular white button mushrooms for the baby bellas. Variation | To broil sirloins: spray a broiler pan with nonstick cooking spray, season both sides of steaks with salt and pepper, and broil 3-4 minutes on each side for 3⁄4 inch steaks that are medium rare. Wipe the mushrooms clean with a damp cloth. Trim any dirty or dried stems and discard. 2. Place 3 tablespoons of the scampi butter in a large sauté pan over medium heat. 3. Add the mushrooms and sauté for 4 or 5 minutes, until the mushrooms are fully cooked. 4. Remove from the heat and quickly stir in the remaining scampi butter. Divide among 4 small plates. Sprinkle the parsley on top and finish with fresh lemon wedges. Scampi Butter 1. In a bowl, whisk together all the ingredients until well blended. It takes a bit of work, but if you keep whisking, it will mix together. (If you have trouble getting the liquid to combine, it may help to soften the butter in the microwave for just a couple seconds; don’t let it melt though.) 2. Spoon the compound butter onto a piece of plastic wrap and form it into a log about 2 inches around. Roll it up like a big cigar and twist the ends shut. You may store in the refrigerator for 1 week or freeze much longer. (you can also easily store it in a small plastic tub in the freezer too.) Spray a 9x9-inch casserole dish with nonstick cooking spray. Bring a large pot of salted water to a boil. 2.Cook the cauliflower and broccoli in the boiling water for about 5 minutes, or until crisp yet tender. Drain well; pat between layers of paper towels to dry, and transfer to the prepared baking dish, along with the cooked chicken. 3.Bring the cream to a simmer in a small saucepan and whisk in the cream cheese, mustard, salt, pepper, and garlic powder. 4.Stir in 1+1⁄2 cups of the cheese and whisk for just a minute until melted and combined. Remove from the heat and pour over the ingredients in the casserole dish. 5.Sprinkle the cooked bacon over all, top with the remaining 1⁄2 cup of Cheddar, and bake for 15 minutes, or until browned and bubbling. Let cool for 5 minutes before serving HELPFUL TIPS Chunk baked ham may be used in place of the chicken, and try using Swiss or gouda cheese in place of the Cheddar for a completely different casserole! Heat olive oil in a large sauté pan over medium-high heat. 2. Generously season chicken breasts with salt and pepper and add to the hot pan, cooking 4 minutes on each side, or until slicing into the thickest piece reveals no pink. Remove and set aside chicken. 3. To the same pan, add butter and mushrooms and sauté until mushrooms begin to brown. Stir in onion and garlic and continue cooking 1 minute 4. Deglaze the pan with the Marsala wine, and then stir in heavy cream, beef base, pepper, and parsley. Let simmer 4 minutes, or until liquid has reduced by about half. 5. Return chicken to the hot sauce be¬fore serving. HELPFUL TIPS Beef base is sold in small jars near the bouillon cubes in the grocery store. Not only is it less processed than bouillon cubes, it contains less salt and more flavor. In a pinch, you can substitute 1 bouillon cube in this recipe. When shopping for Marsala wine, “Cream Marsala” is the best for cooking. This family-style version of chicken cacciatore is a little different as it was devised when I took leftover family style chicken, added tomato sauce and peppers and re-baked. In the process I discovered an easy all-in-one way to make a healthier chicken cacciatore by eliminating the traditional extra step of dredging the chicken in white flour and pan browning. Preheat oven to 350 degrees F. Lightly coat a roasting pan with cooking oil spray. 2. Pour the Tomato Sauce into the roasting pan, place the chicken pieces skin side up into the sauce and sprinkle each piece evenly with the dry spices. (Reserve the bell peppers and onions to add later.) 3. Cover the pan tightly with aluminum foil and bake for 1 hour. 4. Remove the chicken from the oven and add the bell peppers and onions. Continue baking uncovered until well browned, about 1 hour and 15 minutes more, until meat is falling off the bones. Serve with sauce over the chicken and sprinkled with fresh chopped parsley if desired. George’s Tips: Add small whole button mushrooms or green beans for a heartier meal and a few ounces of red wine will take it up yet another level! *Note: There will always be natural sugars in Tomato Sauce due to the tomatoes, and what you want is not to see any “ADDED SUGARS” in the ingredients.
