Banoffee Pie ~ Banoffee Pie is a seductive British pie creation that combines sweet, sliced bananas with fresh whip cream and toffee sauce in a cookie crust. Essentially, it’s banana cream pie kicked up a notch or two. The toffee sauce is the star – it’s like liquid love – sticky, sweet and sinfully delicious.
Vanilla Bean White Chocolate Mousse Cheesecake-- great crust and easy cheesecake layer. The top two layers are a bit more trouble than they are worth, though. Next time, sub the white chocolate layer for a fruit layer, milk chocolate mousse, etc.
Mint Chocolate Fridge Tart - Just made this and it tastes great but was a real pain to make. My food processor was having a hard time getting all the nuts and dates to smooth out without any liquid added. Next time I will probably add some almond milk or maybe some yogurt.
Red velvet moon pies with cream cheese frosting. This frosting was super easy to make: 8 ounces of cream cheese 1/2 cup softened butter 2 cups sifted confectioners sugar (you can use less if you want it to be more tart) 1 teaspoon vanilla extract Let it sit in the fridge for at least a half hour before using it :)
