Avocado Chocolate Mousse
Easy vegan avocado chocolate mousse. I still can't get over just how f*meow*ng good this was! And it was so quick to put together. Look, the first time I made this I was so skeptical. I thought it was going to have an overpowering avo taste. But to my surprise, it had none. 3 Smallish avocados will give you 3 servings. It is a little rich, so you probably wouldn't want to have too much anyway.
Cream Cheese & "Salmon" Omelette
These omelettes contain no eggs! They are super easy to make and quick to cook! You can even prep the batter the night before and have a great omelette breakfast! The "salmon" can also be used in a lot of other dishes too!

Yoh! These where phenomenal! Would 100% recommend everyone try to make these! I’m sure you could use regular oyster mushroom or even shiitake mushrooms. The batter is what really sells it though! If you left out the nori and kelp, you would be left with a perfect beer batter to coat anything!
Pasta Alio e Olio
Aglio e Olio literally means olive oil and garlic. It’s a traditional Italian dish well known for its simplicity. You only need a hand full of ingredients and it is so easy and quick to throw together. But it’s also one of the tastiest pasta dishes you can make! Technically this dish is already vegan.
Pulled Mushroom Mezzaluna
Mezzaluna is an Italian semi-circular stuffed pasta dish, similar to ravioli. Commonly filled with cheeses, mushrooms or spinach. The pasta generally contains eggs. So we will have to make a plan to Veganize this dish a bit… We will be making a basic egg-free pasta dough, stuffed with pulled mushrooms and basil pesto served with a creamy white wine sauce.
"Pulled Pork" Wrap
This recipe can be adapted with any variation of “pulled Pork” like pulled mushrooms, jackfruit and seitan. Don’t be as foolish as I was on the day filming this video. The wrap should be much thinner than mine… I used to much of the dough for each wrap.

Soft and tender “ribs” with beer battered onion rings and mushrooms, roasted potato wedges, red cabbage and peppadew salad and asparagus.

These Savory Mince Jaffles are so simple to make. And you can put anything in them. And it’s a great way to reuse leftovers… Especially curry! You could also sub the mince with Lentils or Chickpeas.
