MANGO CHIA PUDDING ...Your favourite recipe of 2024, and probably my favourite too. Light, refreshing and delicious with fresh or frozen mango. What's not to love. INGREDIENTS (serves 1) Chia layer 3 tbsp chia seeds 120ml milk 1/2 cup mango Yoghurt layer greek yoghurt piece of mango → desiccated coconut Method 1. In a blender, mix together your frozen mango and milk 2. Pour into a jar with chia seeds 3. Leave for a few hours in the fridge or overnight 2. INGREDIENTS 1 spaghetti squash 2 tablespoons butter ½ teaspoon salt ½ teaspoon black pepper 4 tablespoon cream cheese 1 cup mozzarella cheese 1 cup baby spinach INSTRUCTIONS 1. Preheat oven to 400°F degrees. Fill a baking sheet with about 1-inch of water. 2. Cut spaghetti squash in half crosswise, scoop out the seeds and discard. Place cut side down in the prepared baking sheet and bake until tender, about 45 minutes 3. Use a fork to pull apart the strands of squash that look like spaghetti and set half them aside. Season the spaghetti squash halves with salt and pepper, and then add butter, cream cheese an half the mozzarella cheese. Stir it together to combine. Then add the spinach and reserved spaghetti squash, season with salt and pepper and top with the remaining mozzarella cheese.
