The lamb shank from The Raj is sautéed with whole garam masala ginger and garlic then cooked in onion and tomato gravy on a slow fire. When curry is prepared on a slow fire it has a lovely charred smoky and slightly sweet flavour. Read the full review on my blog. Link in bio.
