COCONUT LIME TOFU! For Episode 8 of “15 in 15”, where I’m sharing 15 dinner under 15 minutes !
Optional: - coat the tofu slices lightly in corn flour for a more crisp and golden texture. - If using silken-firm tofu, it is recommended to wrap the block between kitchen towels (placing a small saucepan on top). Let it sit for 10-15 minutes or so to drain out the excess water. Then pat tofu dry with clean kitchen towels and slice it. Remove the tofu and set aside. In the same pan, stir in: - 1 tbsp sesame oil - 1/2 onion, sliced - 3-4 cloves of garlic , minced - Knob of ginger, grated - 1-2 tbsp red curry paste (let me know if you want my homemade paste recipe) - 1-2 tbsp sriracha/ hot sauce Stir it together and once fragrant, add 250-300 ml coconut milk , then stir in: - 1-2 tsp brown sugar - 1-2 tbsp light soy sauce - Juice of 1/2 - 1 lemon or lime by @the_foodiediaries

👇🏾ingredients👇🏾 -1 pack firm tofu -3 garlic cloves -1 small white onion -2 spring onion -small thumb ginger -bunch of coriander -2 to 3 tsp curry powder -bunch of coriander -big pinch of salt -3 garlic cloves -1 mild red chilli -1 tbsp tomato paste -3 large tomatoes -2 tsp curry powder -1/4 tsp turmeric -big pinch of salt -handful of cashews/peanuts -bunch of coriander 👇🏾method👇🏾 -mince the aromatics for the filling, then mash together with the tofu into a paste the refrigerate to chill for 30 minutes. -place 1-2 tbsp inside a dumpling wrapper then fold into a parcel, cover and refrigerate again. by @jacobking
