Egg muffins: Spray muffin tins with nonstick spray, add raw veggies, mix 1 egg per muffin with a splash of milk and pour in muffin cup, bake at 425 for 20 min, can refrigerate for up to 4 days. Perfect bfast on the go!
MY FAVORITE! Bacon wrapped chicken stuffed w cream cheese. Fillet 1 bag of boneless skinless chicken into thinner portions, spread 1 Tbsp cream cheese & top w a seasoning (I used mccormicks original chicken. Roll tightly & wrap pepper flavored bacon, then spear w/ a toothpick. Place in Pyrex dish & bake at 400 degrees, until chicken reaches 160 on meat thermometer. ABSOLUTELY DELICIOUS!! This yielded 10 servings. However, a teenage boy can eat 4 in one sitting. ;)
