The combination of a sweet chewy date and the creamy coconut filling is perfection. I love that you still get all the flavors of the classic candy but with no refined sugar, quality ingredients and a little bit of fiber! 8-10 medjool dates, pitted 1/4 cup shredded coconut 3 tbsp coconut milk 1 tbsp maple syrup 8-10 almonds 1/4 cup dark chocolate 1/2 tsp coconut oil Mix together shredded coconut, coconut cream, and maple syrup. Spoon the coconut mixture into the pitted dates. Top with an almond. In a small bowl, melt the chocolate and stir in the coconut oil until. Drizzle over the dates and place in the freezer or fridge to set.

3-Ingredient Samoa Cookies
You’ll need: 10 dates, pitted and soaked 1 cup toasted coconut flakes melted Dark Chocolate Gems 1. Pit your dates and soak them in warm water for a couple minutes to soften. 2. Process the dates in a food processor. Add a little water if needed and scape down the sides until the mixture is smooth. 3. Stir in the toasted coconut. 4. Roll the mixture into balls and place them on a lined baking sheet. Flatten with a spoon. 5. Poke holes in the center. 6. Place the cookies in the freezer while you melt your chocolate. 7. Remove from the freezer and dip the bottom of each cookie in the melted chocolate. 🤍
