Vanshika Khurana on Instagram: "Recipe ⬇️ (23g P, 582 Cals for the whole thing - Makes 3 portions) ✅Ingredients- 200g Pumpkin Half Yellow Bell Pepper Half Red Bell Pepper 1 Onion 4-5 cloves of garlic Seasonings - Salt, 1/4 tsp pepper 1 tsp chilli oil 1 tsp butter 2 tsp olive oil 180 ml coconut milk (I am using Lite Coconut milk which has 50% lesser cals, if you use normal coconut milk then 100ml should be fine and add more water) 90g Tofu Basil leaves 6-7 1 tbsp sugar/zero calorie sweetener 🌸Roast bell peppers, garlic cloves, onion, and pumpkin by coating them with olive oil and salt. Roast in an oven at 190 degrees for 25-30 mins or in airfryer at 190 degrees for 15-20 mins. It’s packed with protein and bursting with refreshing flavours cut with shades of heat. Serve it with a bowl of steamed rice or noodles to sop up all the extra chilli sauce!
