You can make Stuffed Eggplant with tender oven-roasted eggplants topped with your favorite filling.  This one’s a healthy recipe, you can serve it as a main or side dish and it’s excellent for a cozy family dinner.  Tip: you can also roast eggplants in an air-fryer for half the time.   To do so, cut and season them as above, then air fry them for 12 minutes at 360°F or 180°C cut side up, flip around, and air fry for another 8 to 10 minutes, until brown, a little char, and tender inside.

Ingredients: 
 • 1 medium sized eggplant
 • 2 tbs olive oil 
 • Salt and pepper to taste 
 • 1 garlic clove- crushed 
 • 1/4 cup marinara 
 • 1/4 cup grated mozzarella and @kerrygoldusa cheddar 
 • 2 tbs 
 • 2 tbs Panko breadcrumbs 
 • Basil leaves 
 • Parmigiano Regiano to finish 

Pesto (this will be enough for 2 eggplants or you will have some leftover) 
 • 1/2 cup basil
 • 1/4 cup EVOO
 • 2 tbs Parmigiano Regiano- grated
 • 1 tbs pine nuts 
 • 2 garlic cloves 
 • A pinch of salt 
 • A scrunch of black pepper 

Method:
 • 1. Wash, half and score your eggplant; 
 • 2. Season with salt, pepper, olive oil and garlic and place face down and bake at 425 F for about 30 mins; 
 • 3. Flip eggplant halves and top with marinara, grated mozzarella and @kerrygoldusa cheddar a

Ingredients:
 • 8 oz cream cheese, room temperature
 • ½ tsp garlic powder
 • ¼ tsp oregano
 • ¼ tsp black pepper
 • 2 eggs
 • 10 oz frozen spinach, thawed and thoroughly pressed dry
 • ½ cup feta
 • ½ cup grated parmesan
 • ½ cup shredded mozzarella
 • 4 oz pancetta
 • 1 puff pastry
 • Non-stick cooking spray

Instructions:
 • 1.Preheat oven to 400 degrees
 • 2.Over medium heat, cook the pancetta for 5 minutes until cooked through. Pour the cooked pancetta in a strainer to drain any excess fat.
 • 3.In a bowl, add the cream cheese, garlic powder, oregano, black pepper and 1 egg. Mix thoroughly with a whisk.
 • 4.In a separate bowl, add the spinach and the rest of the cheeses. Mix thoroughly with a spoon.
 • 5.Add the spinach mixture to the cream cheese and mix together with a spoon.

 • Boil in salted water 5-10mins.
 • Take it out and let it steam fry for 10mins.
 • Sauce:
 • -1 onion
 • -4 cloves garlic
 • -4 red Chilis 
 • Toast in a pan for 5-10mins until softened.
 • -1/4 cup (60ml) pineapple juice
 • -2 Tbsp white wine vinegar 
 • -3 Tbsp oil
 • -1 Tsp cumin
 • -2 Tsp paprika 
 • -salt and pepper to taste 
 • Blend and cover the cauliflower with it.
 • Bake at 225C/450F for 45mins.
