West African Chicken & Peanut Stew
I've adapted Marissa's already fabulous dish and just taken out the coconut milk and reduced the amount of chicken and increased the vegetables just to make it a bit healthier (although with a cup of peanut butter, it's definitely not a diet dish). And yes Dear Reader, this is one of those pushy dishes which I urge you to make. It's perfect for every member of the family (except, well anyone allergic to peanuts but you can use almond or cashew butter if they're not allergic to them).

The first time I had African peanut stew, I was 14 years old and staying with my aunt and uncle. They were currently living stateside, although for the last six years they’d made their home in the country formerly known as Zaire (it’s now the Democratic Republic of the Congo). It was the start of what would be known for years after as “African dinner” at Auntie Dee and Uncle Terry’s house.
African Beef Curry
This African beef curry recipe is popular with my family and friends. It's from my Aunt Linda, who was a missionary in Nigeria for 45 years. The stew is served on a bed of rice and sprinkled with toppings. I put the bowls of toppings on my large turntable, and everyone can take whatever they want. In addition to the coconut, peanuts and raisins, you could also top the stew with chopped cucumbers, pineapple tidbits or mandarin orange slices.
