Doing #MeatlessMonday right with a Brown Rice & Quinoa Veggie Pasta Bowl the size of my head! I used some fresh rainbow chard from the farmers market, zucchini, carrots, red bell peppers, black kalamata olives & crunchy pepitas!  I sautéed all the veggies in fresh minced garlic & extra virgin olive oil & threw in some goat feta for it to melt towards the end. I seasoned with chili olive oil, chili powder & no need for sea salt- as the black pitted olives take care of that! This was SO good & ...
