MUNCHIES! 1 cup oats, 1 cup shredded coconut, 1/2 cup flaxseed, 2 Tbsp honey melted in 1/2 cup hot water, approx. 1.5 cups mashed fruit plus matching spices: Banana peanut cocoa / Apple cinnamon raisin / Apricot basil / Blueberry mint / Feijoa gingerbread / Strawberry vanilla / Etc. Add extra nuts/seeds/choc chips/bran if desired. Optional extra: softened butter. Form a dough. Spread flat in greased pan and cut with spatula. Bake about 30min at 400F until your level of crispiness is reached.
Raw oat bites. My actual final mixture: 2.5 cups oats - 1 small pack pumpkin seeds - 1 small pack sunflower seeds - 0.5 cup chopped dates - 1 tsp cinnamon. Mix dry ingredients. Then heat the liquids together until smooth and runny: 0.5 cup nutella - 1 tbsp honey - 1 tsp vanilla - 6 tbsp water. Mix liquids into dry ingredients. Squeeze into balls, adding a little more hot water to make the dough stick if needed - but not much, dough is still crumbly till squeezed! Freeze 30min then store…
Toblerone cheesecake. Ingredients: 1 cup Choc Ripple biscuit crumbs 1/2 cup castor sugar 1/2 cup thickened cream 1/4 cup ground almonds 200g Toblerone milk or dark chocolate for shaving 200g Toblerone milk or dark chocolate, melted 500g cream cheese, sofftened 80g butter, melted
Anzac Biscuits, no-flour version: 1 cup ground almonds, 1 cup coconut, 1 cup Tasti almonds chopped, 1/4 cup coconut oil, 1/4 cup honey, 1 tsp. baking powder, 1 tsp. water. Method: Mix ground almonds, chopped almonds and coconut in a bowl. Melt coconut oil and honey in a sauce pan, then add baking powder and water. Mix everything together until combined. Bake for 35 minutes in a 120ºC oven.
Warm Butternut & Chickpea Salad with Tabbouleh -- Really good. Added golden raisins to squash. Would be better with caramelized onions as raw red onions were too bite-y. Made the tabbouleh with quinoa and added green onions and olive oil to make it more traditional.
