Gateau Breton - Butter a round 9" spring form pan. Cream 1 stick melted butter with 1/2 c sugar, stir in 6 T rum, 3 egg yolks one at a time. Add 1 c flour for stiff dough. Pat into pan. Use 1 egg yolk & 1 T water to brush top. Incise with fork to make criss-cross pattern. Set pan on baking sheet in case butter oozes. Bake 40 minutes at 325. Makes a dense, rich tea cake.
