Lemon Cheesecake Mousse
Ingredients:
For the crust:
1 cup graham cracker crumbs
• 2 tablespoons granulated sugar
• 4 tablespoons unsalted butter, melted
• For the lemon cheesecake mousse:
1 cup heavy cream
• 8 ounces cream cheese, softened
• 1/2 cup powdered sugar
• Zest of 1 lemon
• 1/4 cup freshly squeezed lemon juice
• 1 teaspoon pure vanilla extract
• Optional toppings:
Whipped cream
• Lemon zest
• Fresh berries
• Instructions:
In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter for the crust. Mix until the crumbs are evenly coated with the butter.
