THM S Loaded Creamy Italian Stuffed Zucchini:Saute an entire chopped onion, half a package of turkey bacon chopped, chopped turkey sausages, 1 coarsely chopped garlic clove, and about 2 cups chopped mushrooms until crispy and lightly browned. Add lots of salt and pepper. Mix in 1 cup of low fat cottage cheese. Meanwhile, carve out insides of halved zucchinis, fill with sautéed ingredient mixture, top with chopped tomatoes and shredded mozzarella cheese. Bake at 400 for 30 min.
