I loooove this breakfast bake.  I also make it with bananas and natural peanut butter instead of pumpkin and coconut oil and switch out honey for the maple syrup.  Sometimes I add some cacao powder to it too!  I make it Sunday and it lasts me most of the week, keeps me full to lunchtime, and is relatively healthy!
