Healthy sweet potato base pizza. Topped with tomato passata, cottage cheese, spinach, capers, mushroom & sweetcorn. The base is 1 sweet potato steamed in its skin the microwave for 6mins. Then peel off the skin and mix the potato with 1 egg and about 5tbs of flaxseed so that it becomes thicker. Then I spread the mixture on a baking sheet and cooked for 15 mins then turned it over to cook the under side for a further 8-10mins. Then base is done and you can add whatever you want on top.
