6 eggplants (EP), ground meat, 2 onions, red peppers, olive oil, alfredo sauce (AS), pinch of sugar, salt, pepper & parsley. 30' EP on cooking salt to dry on a colander, dice everything else, sauté onions, add red peppers cooking 20'. Mix this with food processor. Sauté some more onions with the ground meat 1'. Set aside to drain. Mix 1/2 AS w 1/2 red peppers cooked earlier. Pat dry EP and fry. Pat dry again. Set in layers EP & meat, cover with AS. Bake 15' @ 400 degrees F. Fish maybe?
