Make ahead: STRAWBERRY COCONUT OVERNIGHT OATS 4 cups rolled oats, gluten free 12 oz frozen or fresh organic strawberries, pureed 6 cups almond milk 1/2 cup shredded unsweetened coconut 1/3 cup chia seeds 1/4 cup maple syrup 1 tsp vanilla extract In large mixing bowl mix all the ingredients. You may need a little bit more milk if you like. I like mine a bit more liquid like than pudding consistency so I add more. Place in the refrigerator overnight and eat the next morning.
