These Cassava Flour Pancakes are made using Ottos Cassava Flour. They are Gluten Free, Dairy Free, Refined Sugar Free, Paleo, Nut Free and Flourless.

Cassava flour lemon loaf: 1c sugar, 3/4c coconut yogurt, 1/2c oil, 4 eggs, 1c Otto's cassava flour, 1T baking powder, 1/2t salt, 2T lemon essential oil, 1/2c almond flour. Whisk sugar and wet ingredients. Add dry ingredients. Bake in a greased loaf pan at 350 for ~40 minutes or until a knife comes out clean. Let cool completely and top with a glaze of 1c organic powdered sugar and a few tablespoons of fresh lemon juice.
