It's so surprising the amount of people who haven't heard of Falafel, it's 100% vegetarian! I baked my Falafel in the oven and served it over a bed of Quinoa. Quinoa is wheat-free and good alternative to rice as it is not starchy and it is has twice the amount of protein per serving!! I mixed it in with some fresh vegetables and about 30g of soft goat cheese, it's a good fat and comes in at only 86 calories...
