Heat oil in saucepan over medium heat & cook zucchini pulp, stirring occasionally until tender. Stir in water & Knorr® Fiesta Sides™ Mexican Rice. Bring to boil. Reduce heat to low & simmer covered until rice is tender. Arrange zucchini on baking sheet. Fill w/ rice. Sprinkle w/ cheese. Bake until zucchini is tender.
