Brussels Sprouts are rich in many vitamins (B,C, K, A), minerals (calcium, iron, potassium), antioxidants and fiber. Cruciferous vegetables like Brussels sprouts have anticancer properties. They help lower blood pressure, help support eye and immune health. The mellowest and most accepted way to serve is roasted. Many kids (and adults) would otherwise not accept these except when roasted so do try to add these to your rotating vegetable repertoire.
