Apricot Stuffed Pork Tenderloin. Sauteed 1 cup dried apricots, 3/4 cup diced onion in 2 tbsp oil till tender. Added zest of 1 lemon & juice from the same w/2 tbsp butter and 3 tbsp herb bread crumbs. Butterflied 1 tenderloin, coated w/rub, added stuffing and rolled. Cooked the other w/o stuffing. Started the stuffed one over direct heat at 350F. 10 minutes later, I put the non-stuffed one on. Cooked till 145-148F (45-60 minutes). Good mix of sweet, spice & savory.
