Lemon Pudding Cake   Mix 2 yolks, pinch salt, 3/4C milk, zest of lemon, 5 T lemon juice, 4T sugar. Whip 2 whites with 2T sugar. Mix 1T each: rice flour, oat flour, arrowroot (or other starch) into yolk mixture. Fold in whites. Turn into ramekins - 3-4. Bake 325° in water bath for +/- 30 min.

Strawberry Orange Jam Bars, gf. With chia seeds. Replacing more than half of the butter with almond butter, making it more linzer-tarty and more than just eating a cookie with jam. Mixing the jam with chia and water makes it less cloyingly sweet than the usual after-school bar.
