Low Hop Clover, Hop Trefoil, Field Clover: Edible parts: The flowers, leaves and seeds are edible. All clover types are known to be part of the paleo diet of the First Nations people. Flowers can be put into teas. Seeds (in autumn) can be collected and eaten as is or roasted and can be ground into flour as well. Leaves can be tossed into salads, omelets, juicing, sandwiches, etc.
