(Minor changes from the 'Biggest Loser' recipe) 2 cups cooked quinoa 1 diced mango (I add pineapple sometimes) 1/2-3/4 cup chopped cilantro 1 15-oz can black beans 1 red bell pepper chopped 5 green onions sliced 4 Tbs apple cider vinegar 2 Tbs olive oil 2-3 Tablespoon fresh lime juice Salt & pepper  **Mix everything together and refrigerate for about an hour.  YUMMY!
