KAPHA DOSHA DINNER - Polenta with Mushrooms & Caramalized Onion - Boil 4c water, reduce to low heat, add ½ tsp salt, and whisk in1c  polenta. Cook on low heat for 15-20 minutes till thick. Stir. Heat 2tbsp olive oil in another pan. Add 1large sliced onion and ¼ tsp salt and sauté till golden brown. Add 1/2tsp brown sugar and 1c button or Crimini mushrooms and cook on low heat till  caramelized. Spoon polenta in a bowl. Top with onions and mushrooms, some freshly chopped chives or parsley.
