Burrata, figs, shiso @ ACME, Sydney  I didn't want to stuff myself before the pasta, but burrata... Too hard to resist isn't it? And it is local burrata cow's milk made in the east of Sydney. Australian burrata, I never had it.  And this dish was much more complicated than it sounded.  Fig jam, fig, fig leave:, fried shiso leaves, shiso powder, kombu powder. A lot, but not over.  Back to the burrata, quite amazing quality, not very "milky" in the flavor but creamy with lots of lactic juice…
