Turkey farmer, Paul Kelly with his Kelly Bronze wild turkeys in their woodland home on November 22, 2007 in Danbury, Essex, England. It is the first year that Paul Kelly has bred wild turkeys where the birds live between bluebell woods and open pasture. Using traditional processing methods, Kelly plucks and hangs the free-range birds for 14 days to allow them to develop their flavour.
