Rosanna McPhee's tarte flambée au Munster recipe celebrates the region of Alsace, with Munster cheese, bacon and onion scattered over a creamy cheese base on crisp, golden flatbread. Enjoy with a crisp glass of Gewurztraminer.
1 Pint of Heavy Cream 1/2 cup of grate parmesan (the good kind) Salt and pepper to taste 5-6 Yukon Gold (They are the best) or Russet Potatoes. Do not use red or waxy potatoes. You need the starch! cut into 1/8 inch slices. Layer Potatoes, cream, salt, pepper, cheese and repeat for 4 to 5 layers. Bake @ 375 for 1 hour. DO NOT COVER :)
TARTIFLETTE (potato & cheese casserole, a French comfort food): 3 large potatoes, peeled and sliced; 7 slices bacon, chopped; 1 T butter; 1 large onion, sliced; 1/4 cup white wine; 2 T creme fraiche; 1 (8 oz) round Reblochon cheese; salt & ground black pepper to taste. [You can substitute Brie or Munster for Reblochon cheese.]
