Okay, this is SO cool. the origins of red velvet cake. The red color is from a reaction in the alkaline of cocoa powder with buttermilk, but new processes in chocolate lost the alkaline, thus losing the coloring. This is how to make REAL red velvet cake using the cool reaction, no food coloring or nasty beets!
