Gluten-free Buckwheat Scones 1 T ground flaxseed meal 2 ½ T water ¼ C raw honey ½ C coconut oil, softened 4 T almond milk 1 ½ C buckwheat groats (or 1 ¾ cup buckwheat flour) 1 tsp gluten-free baking powder 2 tsp lemon zest 1 tsp chopped fresh rosemary Pinch of salt; Mix honey and coconut oil together, and then add in flax egg (Flax & water) & almond milk and mix.Combine buckwheat flour, baking powder, lemon zest, chopped rosemary and salt and mix well Bake 10-15 min @ 350.
I made this for our church group tonight and they turned out good! People were asking for the recipe! One thing though... The amount of Cinnamon filling wasn't enough for me... I doubled the recipe for that part and that seemed to cover the dough better!
