I love me some eggs and potatoes! I took the potatoes (gold potatoes) and baked them for 30 mins at 400 with olive oil, Everglades seasoning (delish), and black pepper. I waited til the potatoes were done and added chopped onions and chopped bell peppers sautéed in olive oil for extra flavoring. Then I made two eggs: one egg cooked over medium and one egg white (cuts the cholesterol in half) and served it all at once and scrambled it altogether. Seriously deliciously!
