Made this for dinner tonight. Really good. I took a good cut of pork loin that I got at Whole Foods, peppered the pork then wrapped it in a applewood smoked bacon that was nitrate free. Bake in the oven at 375 F for about 1 hour or a little more...depending on your oven. I like the bacon to get nice and crispy...and the bacon keeps the pork moist. I served it with a red cabbage slaw...a.k.a Yuletide slaw.

I had a Pork Chop Marsala at Francesca's the other night. Was so incredible I decided I have to make it. Found this recipe. Would double the sauce, maybe double the mushrooms, use thick cut bone-in chops, and add flour after the mushrooms for a thicker sauce. Can't wait to make it.
