Chef Amy Pressman loves pasta with hot Italisan sausage and sauteed broccoli rabe, so for this burger she purees broccoli rabe for a pesto (you can substitute store-bought basil pesto) and adds crushed red pepper to mimic the spiciness of the sausage.
