Skinny Ambrosia Salad - ambrosia is a creamy fruit salad traditionally made with pineapple, coconut, fruit cocktail, heavy cream and walnuts. Here is my skinnier version without all the fat.

Sunbutter Freezer Fat Bombs come to the rescue when the carb cravings hit. A stash of these frozen fat-full bites will keep you satisfied.

Sunbutter Fat Bombs

When making fat bombs, coconut oil and cocoa butter are two nice fats to work with. When chilled they harden and give these Sunbutter Fat Bombs their shape.

1 1/2 cup shredded coconut  3 Tablespoons butter or coconut oil   Combine both ingredients until well combined. Press into an 8-inch pie plate. If desired, you can double the batch for one pie plate. As you can see in the pictures, it is pretty thin coconut pie crust. Bake if desired at 350 F until golden brown. This crust is perfectly good un-baked, but if you love the flavor of toasted coconut (and who doesn't), this is an easy step to add. Cool, and add your filling. Enjoy!
