Pour mixture in muffin tins about 1/2 way.Place in oven for 10-15 minutes or until toothpick comes out clean. Feel free to top with some salsa or not.

I would use egg whites, but it's High protein omelette muffins. Great for a high protein breakfast on-the-go! Make them on Sunday night and store in fridge for breakfast for the work week. Just reheat a few seconds in microwave on way out the door!
