Seriously, I’m totally in love with this chickpea salad inspired by my good friend Aleyda at The Dish on Healthy. Roasted Portobello Mushrooms, Grilled Eggplant, Roasted Cherry Tomatoes, Sautéed Spinach from my garden, quinoa & avocado.  Plus an Easy Balsamic Vinaigrette. Totally hit the spot & now I have some extra in the fridge for the week.  I also grilled a big batch of chicken for the boys. #glutenfree

  • 1 can Black beans
  • 2 tbsp Cilantro, fresh
  • 3/4 cup Corn, fresh or frozen kernels
  • 1 clove Garlic
  • 1 tsp Jalepeno
  • 3/4 cup Jicama
  • 3/4 cup Radishes
  • 1 Red bell pepper
  • 2 1/2 cups Romaine
  • 3/4 cup Tomatoes or cherry tomatoes
Condiments
  • 2 tbsp Honey
  • 1/4 cup Lime juice, fresh
Oils & Vinegars
  • 1/4 cup Olive oil

  • 1/4 cup Feta, low fat
