Being a southerner with a bunch of fishermen in my family, we usually have an abundance of catfish in the freezer. I decided if tilapia could be parmesan encrusted, so could catfish. My mom and I prefer these over fried catfish.

Ingredients  4 Tbs. butter, divided  1 yellow onion, diced  1 rib celery, sliced into small cubes  2 carrots, cut into small cubes  Salt and freshly ground black pepper  2 boiling potatoes, peeled and cubed  1 1/2 Tbs. fresh thyme leaves, minced   3 cans chopped clams and their juice (6.5 oz each can), divided Buy Here!  1 lb. medium shell pasta  1/4 cup all-purpose flour  1 cup milk   1 cup breadcrumbs  1/4 cup grated fresh parmesan cheese
