Almond Meltaway Cookies. Not really a "classic" meltaway (as in it doesn't melt in your mouth like the ones made with cornstarch), but they're really simple and not too sweet. This made 50 small cookies but I ended up with about 6 which didn't get frosting. Increase the frosting recipe to 1.25 c. powdered sugar, 1 1/2 tbsp. milk, & a smidgen more almond extract.
buttery-jam-thumbprint-cookies 1 cup (2 sticks) salted butter, softened to room temp (not melty) ½ cup confectioners' (powdered) sugar, plus ¼ cup more for dusting 2 teaspoons pure vanilla extract ⅛ tsp table salt 2 cups all purpose flour ½ cup thick fruit preserves (I used raspberry, blackberry, and peach)
