I tried these today with my own wheat-free flour blend (not gluten free) of 4 parts oat flour, 2 parts brown rice flour, 1 part potato starch, 1 part masa corn flour, and 1 part tapioca flour. They were awesome!
Coconut Flour Shortbread Cookies- 3 Tbsp coconut flour, 2 Tbsp organic butter OR coconut oil, and 1 Tbsp honey. Makes 4 or 5 cookies quickly. 1 T of honey has 17 carbs, so would make each cookie right at 5 carbs.
