Vegan Roasted Garlic Cauliflower Soup - this turned out great! Just  few modifications: I skipped the nutritional yeast and went a little light on the salt. Added about 1/2 tsp smoked paprika. Used Better than Bullion vegetable broth and didn't have fresh thyme, so I used a bunch of dried thyme. For "milk" I used Silk's Cashew Almond milk (the high protein one). Also threw in about a cup of peeled Yukon potato and about 2 TB of Earth Balance (vegan margarine). So good!
