Monica's Granola: 3/4 cup pure maple sugar; 1/2 cup packed light brown sugar; 1/2 cup extra virgin olive oil; 1-1/4 tsp salt; 1 tsp cinnamon; 3 cups old fashioned oats; 2 cups pecans, chopped; 1-1/2 cups coconut. Stir together in a bowl, then pour on cookie sheet lined with parchment paper. Bake at 300 degrees for 50-55 minutes stirring every 20 minutes.
