I love those healthy soft tortilla made with coconut flour and chia seeds. Soft, chewy and fulfilling. And they are also gluten free and vegan!

Those paleo tortilla are thick, soft with a chewy texture similar to chinese dumpling and can be filled with any raw vegetables of your choice.

Instead of eggs I used 6T ground flax seeds blended with 6T water, earth balance "butter" and BAM vegan!  I also used 1/4C maple sugar & 1/4C coconut sugar instead of brown sugar. & I used subistuted 1/2 the peanut butter w/ cashew butter. They were SO yummy! #vegan #healthy #recipe

Eggless vegan waffles - So much better than you'd expect- light and fluffy! One hint: Instead of adding melted coconut oil to cold milk (as the author did), heat up the almond milk and then add the coconut oil. I didn't have any maple syrup, so I substituted honey, and it all came out just fine. Also, I used white whole wheat flour, and it worked perfectly.
