INGREDIENTS: 1 cup cooked riced cauliflower, 1 cup shredded mozzarella cheese (I used an italian blend), 1 egg beaten, 1 tsp dried oregano, 1/2 tsp minced garlic, 1/2 tsp kosher salt, olive oil (optional), pizza sauce, shredded cheese and your choice of toppings.
Baked courgette chips - 1 lb. of zucchini, Italian seasoned Panko bread crumbs, a couple of eggs, and some grated parmesan cheese. (Substitute for Italian-style panko bread crumbs: add 1/2 tablespoon of Italian seasoning, 1/2 tsp. garlic powder, 1/2 tsp. Kosher salt, and 1/4 tsp. onion powder to 1/2 c. plain panko bread crumbs.)
