I love a good, basic chicken salad. Nothing frilly or sweet. Organic, pastured meat, homemade mayonnaise, celery, tangy capers and parsley. It's great to eat alone, on grain free crackers, or on a slice of grain-free toast.
Crispy skinned salmon is the best! The key to perfect, crispy skin salmon is to cook the skin side first and longer. Heat your oil in a non-stick pan on fairly high heat and place your salmon skin side down.
