Spicy Fish Taco Bowls: I did a version of this with tilapia sprinkled with chili powder, cumin, cayenne and salt sauteed in 1 tsp olive oil. I used brown rice, black beans, frozen corn, red pepper and red onion and topped with hot sauce. Really tasty.
We're serving a mushroom/cheese quesadilla with a spicy dipping sauce as a passed appetizer. Here's a slightly fancier version you can dish up at your own party. Your friends will definitely be impressed (so long as you don't admit how easy these are)!
